This depends so much on the kind of use-cases that you want to support through your OpenMRS implementation. It depends on the features that you need and what kind of medical problems you are trying to support. Create a list of those required features and then see what modules are available that have those features. If you share that requirements list, then people in the community can tell you what modules to use to support that feature
